Keep the kids happy and put some variety into their school lunches. Use this as a spread for their sandwiches. Keeps for a week in the refrigerator if kept in a sealed container.
Just put all the ingredients together in a food processor and blend until they are smooth.
Ingredients
1 cup (about 250 ml) of chopped cooked chicken pieces
1/3 cup (about 100 ml) of coarsely chopped walnut kernels (don’t buy kernels from a supermarket, open fresh in-shell walnuts!)#
1 tablespoon* chopped onion
1 tablespoon of chopped parsley
3 tablespoons of mayonnaise
¼ teaspoon mixed herbs (a generous “pinch”)
1 teaspoon lemon juice (about 5 ml)
* (One tablespoon is either 15 or 20 ml depending on whether you use the English or Australian “tablespoon”, but then who ever measures this sort of thing exactly?)
# (A distressingly high proportion of walnut kernels sold in mass retail outlets have a strong unpleasant taste. This indicates that they are in fact rancid and well past their use-by date. )
